No Substitutes
Look closely at my grandmother's handwritten bread recipe and you'll find two words tucked in the corner, underlined and certain: No Substitutes.

It's a recipe for bread and pizza dough — six cups of flour, a well in the middle, Hi Rise yeast, a cube of melted butter, mix and wait until it comes up to bubble. But those two words in the margin were the real instruction. She didn't mean margarine instead of butter, or shortcuts instead of time. She meant: use the real thing, do it right, or don't bother.
No substitute for authenticity. No substitute for integrity.
Over the years those two words outgrew the kitchen and became my whole philosophy. I believe in them so much that I had "No Substitutes" tattooed on my arm, in her handwriting. It's my compass.
In my family, food is the heart of all we do. So No Substitutes is the name over the door, and everything we create lives under it — starting with Pasta is Love, our celebration of the Italian table and the joy of a full plate. Same philosophy, different flavor: no substitute for joy.
Nothing here is a substitute for the real thing.
